This includes but is not limited to the selection, scheduling, directing, training, and development of all F&B guest facing and culinary staff and developing and implementing systems and methods of controls and service, department budget and departmental policies and procedures.ESSENTIAL JOB FUNCTIONS/DUTIES:List duties in order of time spent or importance. Essential duties and tasks that must be performed with or without reasonable accommodation.

  • Selects, schedules, supervises, directs, trains, and develops staff. -
  • Ensures compliance with all department and company rules, regulations, policies, procedures, internal controls and government rules and regulations. -
  • Ensures proper level and quality of customer service. -
  • Plans and directs overall food and beverage outlet and service operations including kitchen preparations and sanitation, restaurants, catering, beverage service operations, and other support services. -
  • Oversees menu development and cost analysis. -
  • Ensures Food and Beverage management's performance as a team and proper safety training of all F&B staff. -
  • Formulates, implements, and educates on company policies and procedures. -
  • Completes competitive market analysis. -
  • Attends periodic meetings and training sessions.
  • Promotes positive public and employee relations.
  • Devises and implements short-and long-term departmental goals, objectives, policies, and operating procedures; monitors and evaluates operational effectiveness; effect changes required for improvement. Identifies key drivers of success.
  • Monitors all activities of the department to ensure that all applicable internal policies, federal and state laws, rules, regulations, and controls property wide are enforced. -
  • Administers departmental operating budget and financial controls. Responsible for financial planning, forecast, labor, and payroll for areas of responsibility.
  • Ensures department delivers and maintains a maximum level of property-wide service and satisfaction. -
  • Facilitates communication throughout the property by organizing and presiding over regularly scheduled meetings with employees within the department and with other departments as appropriate to ensure property wide communication.
  • Oversees all hiring, performance management, and employee engagement within the department. Provide training opportunities, constructive and positive feedback to team members within area of responsibility. Creates a motivating environment.
  • Keeps informed of all new developments within the department and makes recommendations designed to maximize department and company success.
  • Promotes positive, fair, and ethical relations with all employees, contractors, and in all interactions.
  • Collaborates with other departments to ensure the success of the property as a whole with an emphasis on the Food & Beverage department.
  • Maintains complete knowledge of all liquor brands, beers, and non-alcoholic selections available in outlets, the particular characteristics and description of every wine/champagne by the glass and major wines on the wine list, designated glassware and garnishes for drinks, all bar menu items, preparation method/time, ingredients, sauces, portion sizes, garnishes, presentation, and prices.
  • Abides by state liquor regulations, particularly those prohibiting service to minors, intoxicated persons, and drunk driving. -
  • Monitors and handles problems with intoxicated guests and/or altercations.
  • Works with safety as a priority and follows department and company safety standards.
  • Maintains relevant knowledge of industry through continuing education and training.
  • Effectively manages internal and external guest relations, which may require levels of patience, tact, and diplomacy. Responsible for addressing guest and employee issues as appropriate. -
  • Manages multiple priorities simultaneously and meets deadlines, often in stressful and high-pressure situations.
  • Performs other duties as assigned.JOB SPECIFICATIONS:
    • Bachelor's Degree in Business Administration or related field; or equivalent work experience preferred.
    • 10 years of Food & Beverage multi-outlet operations experience, with 5 years in a Senior Management capacity.
    • Excellent organizational skills and attention to detail.
    • Strong analytical and problem-solving skills.
    • Strong supervisory and leadership skills.
    • Proficient with Microsoft Office Suite or related software; and Point of Sale systems.
    • Demonstrated ability to manage and prioritize multiple priorities while maintaining a high level of energy and output.
    • Must have a comprehensive understanding of player tracking systems and complimentary guidelines consistent with normal industry standards.
    • Demonstrates strong organizational and leadership skills.
    • Demonstrates commitment to guest service excellence and ethical conduct.
